<Mexican Food Night>

The second half of this semester brought joyful news to all of the UIC houses. After years of RC events only being held through zoom, we could finally start gathering offline and hang out. With this newfound freedom, the RAs were excited to plan and host the best events possible. 

Appenzeller's first offline event would be <Mexican Food Night>, where Zellers gathered to create delicious fajitas while laughing and sharing stories. Cooking skills were not needed as the RA's in charge were there to guide and help where necessary. The Zellers came equipped with enthusiasm, smiles, and excitement. The dorm kitchen was once again filled with life as the shared love of food brought students together for the day. The participants were shown a presentation on how to create the fajitas and then given the recipe. From then on, they cooked together in groups of three and made delicious Mexican fajitas, guacamole, and pico de gallo. 

The Zellers' joy at finally being able to meet each other through this offline RC event created a warm feeling in the once quiet kitchen, and the RAs enjoyed watching the students connect. The excitement of offline events even translated into the cleanup when the event was over, as everyone was still buzzing with joy from spending the evening together. 

Appenzeller's first offline event was a success and Zellers expressed their desire for more food nights to highlight dishes from many other countries. Maybe Food Night will become a staple event for our house to show off unique and delicious food from the diverse countries that our Zellers call home. Now that both Zellers and RAs have gotten a taste of offline events, the hunger for more will continue to grow, and more exciting and creative events are definitely in our house's future.
